One more sleep and Christmas will be here. Time has flown and I can’t believe how quickly it has crept up on us. Did it creep up on you too? Here are five festive ways to use fruit mince. All very quick and easy. You can use your own fruit mince, I did make some earlier this month. Alternatively grab a jar from the supermarket, either way, quick and easy festivity at your finger tips. Perfect for that last minute baking.
Grab your favourite good quality frozen short crust pastry from the freezer and make some very quick and easy fruit mince tarts or pies. Line greased cupcake pan with pastry, spoon in fruit mince and cook on 190 deg C until pastry is cooked.
Christmas Ice Cream
Add 3/4 cup to one litre of your favourite vanilla ice cream. Let the ice cream soften slightly, mix through your fruit mince and then place it back in the freezer until use.
Fruit Mince Cigars
Use two sheets of filo pastry. Brush one sheet with melted butter and sprinkle with cinnamon sugar. Place next sheet on top and repeat. Place 1/2 cup of fruit mince along the short side of the sheets and roll up to form a cigar shape. Cut into desired lengths and bake at 180 deg C until brown and crisp. Sprinkle with icing sugar before serving.
Christmas Morning Scones
Use your favourite scone mix and mix through 3/4 cup of fruit mince. Sprinkle tops of scones with demerara sugar and bake as per your recipe.
Make up your favourite chocolate brownie mix. Stir through 1 cup of fruit mince. Bake as per your recipe.
These are just a few easy suggestions to use fruit mince. I am sure if you put your mind to it, uses would be endless.
