Lightly whisk eggs, caster sugar and vanilla extract in a large bowl. Whisk in milk and yeast. Whisk in sifted flour a third at a time. Leave mixture to rest for 30 minutes.
Heat vegetable oil in a saucepan or deep fryer. Test the heat with a small dollop of batter. Batter should sink and then immediately raise to the surface of the oil and gently fry.
Using two spoons coat a KiwiBerry in around 1 table spoon of batter and drop it in to the hot oil. Cook until golden brown and the dough is completely cooked. If your oil is too hot, it will brown but not cook though. Remove from oil and drain on paper towel.
