In a small saucepan place dates and rum. Over a low heat stir the dates until they have absorbed all the rum and then stir through coconut oil. Place saucepan to the side and leave to cool.
Once the date mixture is cooled place in a food processor. Add all the other ingredients except the extra rum. Blitz until ingredients have combined.
Taste the mix and if you feel an extra shot of rum is needed, add a tablespoon more.
Press and roll mixture into balls (weighing around 22 grams). You can either just roll them in extra cacao powder to give them a ‘truffle’ look or make them a little special by adding a little bit of silver leave.
