360grams0.79 lbs milk chocolate, | use your favourite eating chocolate
190grams0.42 lbs red raspberry lollies, | use any soft raspberry lolly you like
90grams0.2 lbs marshmallows, | use vanilla or plain
140grams0.31 lbs white chocolate, | use your favourite eating chocolate
1packet mini Tim Tams
Line a 20 x 25cm (8 x 10 inch) lamington/slice tin with baking paper.
Place milk chocolate in a large bowl. Using the microwave melt the chocolate.
I blast it for 1 minute, then give it a stir. It usually has only started to melt at this stage.
Then keep melting the chocolate in 30 second intervals, stirring between each one until the chocolate has melted.
Add chopped Tim Tams, chopped marshmallows (whole if using mini ones), and whole red raspberries to the bowl with the melted chocolate
Mix all the ingredients thoroughly to make sure everything is coated well with the melted chocolate.
Spoon Tim Tam rocky road mixture into the prepared tin and spread it out evenly.
It is ready to go into the fridge to set at this stage. Decorating as below is totally optional, but looks great.
If decorating your Tim Tam rocky road melt white chocolate in the microwave the same way you did the milk chocolate.
Using a spoon drizzle the melted white chocolate over the top of the rocky road.
Then gently press mini Tim Tams randomly over the top of the white chocolate.
Place in the fridge for a couple of hours to set. Then remove from the tin and baking paper. Cut into desired sized pieces and store in an airtight container.

If you can't find Tim Tams you can substitute with your favourite cookie.TIM TAM FLAVOURSThere are many flavours available. In this recipe I use original flavour, but use whatever flavour you would like to experiment with.If using ones with dark chocolate coating, I suggest using dark chocolate instead of milk chocolate. The same goes if using white chocolate Tim Tam biscuits, use white chocolate instead of milk chocolate.Also, swap out the red raspberries with a suitable alternative if using flavoured Tim Tams, eg;Mint Tim Tams: You could use Peppermint Crips or other mint lollies. 1 teaspoon equals 5ml
