Cold smoked tomatoes are easy to make. Sweet juicy summer tomatoes are given a savoury smoky hit. Perfect to use in all sorts of dishes, or simply eaten by themselves.
No need to pull out the Traeger grill or other large pieces of equipment. All you need is a smoking gun. No smoking gun? Don't worry, I've included an easy, no gadgets necessary, baking tray smoking method as well.
I love making things at home I can't easily buy at the shops. When is the last time you saw smoked tomatoes at the supermarket? Why not add a little smoked five start restaurant quality flair to your kitchen.

Ingredients
- Tomatoes: Any type of tomato can be used in this recipe. Egg/Roma tomatoes and small vine-ripened tomatoes like Campari. My preference is for tomatoes that aren't too large.
- Salt: Used to enhance the flavour of the tomatoes when roasting.
- Olive oil: For flavour and roasting.
Equipment
- Smoking Gun: You may think you don't need one. That is until you own one and realise all the things you can do with a smoking gun. The Polyscience Smoking Gun is relatively inexpensive especially if you grab it when it is on sale. I own the Breville Smoking Gun which I find incredibly easy to use.
- Woodchips: The woodchips used with smoking guns are quite fine. You can use Hickory, Applewood, or Cherrywood. If you buy the Breville multipack it contains a selection of woodchips you can try. Once you know what you like buy the larger packets of woodchips from Sous Vide.
- Zip-lock/Zip-top Plastic Bags: The tomatoes are placed in a large zip-lock bag and you fill it with smoke. It is then sealed to allow the smoke to penetrate the tomatoes.
How to use smoked tomatoes
There are numerous delicious ways you can enjoy smoked tomatoes.

Recipe Walk Through
Cut tomatoes in half and place on a lined baking tray. Sprinkle with salt and drizzle with olive oil.
Place in a pre-heated oven and bake until they are completely soft and the skins start to wrinkle around the cut edges of the tomatoes.
This will take 1 - 2 hours. All depending on the size of your tomatoes.
Once roasted remove from the oven and allow to cool on the baking tray.
Place cooled tomatoes still on the baking tray in a large zip lock bag. If you do not have a zip lock bag big enough, place roasted tomatoes in a single layer in a smaller glass or metal container.
Following your smoking gun manufacturer's instructions light the woodchips and turn the gun on to smoke.
Place the rubber hose from the smoking gun into the top of the bag. Zip the bag closed to secure the hose end inside the bag.
Fill the bag with as much smoke as it will take. It's best to do this in an open area as some smoke will escape the bag. Once the bag is full of smoke, quickly remove the smoking gun's rubber hose and seal the bag completely.
Leave the tomatoes to absorb the smoke for around 10 minutes. Once you can clearly see the tomatoes in the bag, it will look like the smoke has disappeared, remove the tomatoes from the bag.
Smoked tomatoes will keep up to a week in the fridge in an air-tight container.
Baking Tray & Foil Smoking Method
- Make a small open top container from a small sheet of aluminium foil to place your fine wood chips in.
- Put the chips in the prepared aluminium container. Place the container in a dry frypan and heat until it is smoking.
- Place the aluminium container in the tray with the oven-roasted tomatoes.
- Cover the tomatoes and the tray with aluminium foil. Folding the foil securely around the roasting tray rim, and folding any joins in the foil together. You don't want any smoke escaping.
- After 15 minutes remove the tomatoes from the makeshift baking tray smoker. They are now ready to use.

All measurements are Australian metric standard. All measures are level, and cups are lightly packed unless specified. 1 teaspoon = 5ml / 1 tablespoon = 20mls / 1 cup = 250ml /4 teaspoons = 1 tablespoon.
