    Creamy Tomato Gin Soup

    A true winter warmer, creamy tomato gin soup. An easy soup to whip up from pantry staples with a nice glug of gin to round it off. Turn a can of ordinary tomato soup into extraordinary. This soup will definitely keep you toasty warm on a cold night.

    If you have ever wanted to add some pizzazz to the humble can of tomato soup, this is the recipe for you. It's amazing what some gin and other flavour enhancers can do. Serve with some crusty bread for a meal of pure comfort.

    Ingredients

    • 1 tablespoon butter
    • 1 tablespoon finely chopped onion
    • 1 garlic clove, minced
    • 2 tablespoon tomato paste
    • 30 ml (4 tsp) Gin
    • 410 g can tomato soup | not concentrate
    • 65 ml (¼ cup) chicken stock
    • 65 ml (¼ cup) pouring cream
    • salt and pepper to season

    Instructions
     

    • Place pan on medium heat and add butter.
    • Once butter has melted add onion and garlic. Cook until they have turned a light golden brown.
    • Add tomato paste, mix well and cook a further 30 seconds.
    • Add gin and flame.
    • Add tomato soup, and chicken stock. Mix well and bring it to just before simmering.
    • Stir through cream, season with salt and pepper and serve.

    Oven Temperatures

    All oven temperatures are fan forced.

    Measurement Notes

    All measurements are Australian metric standard. All measures are level, and cups are lightly packed unless specified. 1 teaspoon = 5ml / 1 tablespoon = 20mls / 1 cup = 250ml /4 teaspoons = 1 tablespoon.

    Recipe Notes

    This recipe is not suitable to freeze.
    Recipe Origin Notes:  This recipe is from my mother's recipe folder.  It was originally called Sultan's Cream of Tomato Soup and is based on a recipe she picked up from the Jakarta Hilton during her travels.  I date it back to the mid 80's as there is a telex number on the original recipe.
    Gin:  The original recipe called for 1oz of gin, which roughly equals 30mls.  I admit I am a little heavy-handed and probably add around 60mls (2 Tbs), or as I would say "a good glug of gin".

      Hello, Sara.

      I definitely want to make this soup this Summer in the Northern Hemisphere!

      Question: How much gin do I add? I’ve looked at the ingredient list 3 times (so far) but I don’t see it? I can do the math/maths if you add the Australian measurement.

        Thank you for your comment and for bringing my attention to the gin amount being absent from the reccipe. I'm so sorry, and it's been added to the recipe.
        The amount of the original recipe is 1oz or 30ml/4 tps. I tend to be a little heavy-handed and add double that.
