    Latvian Creamy Tomato Salad

    Creamy tomato salad made the Latvian way with sour cream and scallions. Only four ingredients make up this refreshing and easy summer salad.

    A simple summer salad making use of gorgeous seasonal tomatoes. For non-Latvians using sour cream in a salad, as I do here, may be a little strange. It isn't an ingredient of many in a dressing, it is simply sour cream.

    This creamy tomato salad is surprisingly refreshing with the tang of sour cream, crunch of green onions (scallions), and their mild onion taste. A great side dish when having a barbecue and goes perfectly with my BBQ mayonnaise chicken.

    With only four staple ingredients it is super simple to make, a great addition to my Latvian recipes, and I highly recommend giving it a go.

    Quick Latvian Creamy Tomato Salad FAQs

    How long does creamy tomato salad take to make?

    This is a super quick tomato salad recipe that takes 5 minutes to prepare.

    Can I halve or double this recipe?

    Yes, you can double or half this recipe. Use as many tomatoes as you want and adjust the sour cream and scallions accordingly.

    How long will this salad keep for?

    Creamy tomato salad is best eaten on the day. You can keep leftovers in the fridge for a few days, but the tomatoes will keep releasing juices and the dressing will become quite runny.

    Can I make this recipe ahead of time?

    This recipe is best made at the time of serving. What you can do to prep ahead is cut up the tomatoes and the scallions and store them in the fridge. Plate, removing some of the released tomato juice before you do.

    • Tomatoes: Use your favourite ripe tomatoes. Tomatoes are the hero of the dish, make sure to use ones full of flavour, best when in season. I use room temperature tomatoes.
    • Green Onions: Also called scallions.
    • Sour Cream: Make sure to use thick sour cream, and it is preferable to use full fat, not light.

    What to serve with this recipe

    This summer salad is a great side dish when having a barbeque and is great with BBQ rainbow trout or Aussie BBQ prawns.

    It also makes are great side dish to cooked ham, corned beef, or air-fried pork loin (this recipe has perfect crackling everytime!).

    Recipe cost saving ideas

    Buying tomatoes when in season is your cost saver on this recipe. I am also a big advocate of shopping at your local farmers' markets. Produce is better quality, cheaper, and usually direct from the source compared to large supermarket chains.

    There doesn't need to be a walk through for this recipe as it is so easy to make. Simply cut up the tomatoes and place them in a serving bowl. Sprinkle with a little salt and top with sour cream and scallion.

    My number one tip is to serve the sour cream on top of the salad and mix it through at the table. This will prevent the sour cream from becoming overly runny with the released tomato juice.

    Ingredients

    • 400 g (14oz/) tomatoes | 8-10 small or 5 -6 medium tomatoes
    • 85 g (⅓ cup / 2½ oz) sour cream
    • 2 shallots / green onions | finely sliced
    • Salt

    Instructions
     

    • Cut tomatoes into bite size wedges. Place in a serving bowl or plate.
    • Sprinkle with a little salt.
    • Top with ½ of the finely sliced spring onions. Then top with the sour cream.
    • Top the tomato salad with the rest of the spring onions and serve.

    All measurements are Australian metric standard. All measures are level, and cups are lightly packed unless specified. 1 teaspoon = 5ml / 1 tablespoon = 20mls / 1 cup = 250ml /4 teaspoons = 1 tablespoon.
