Ingredients
Pineapple and Sake
- 500 mls (2 cups) pineapple juice
- 400 grams (2 cups firmly packed) brown sugar
- 250 mls (1 cup) saké
- 2 limes | zest and juice
- 30 grams ginger | peeled and sliced
- 5 kaffir lime leaves | bruised
- 1 ½ tablespoons coriander seeds
- 20 whole cloves
Maple, Pineapple, and Whisky
- 2 pineapples | remove skin and cut into each pineapple into 6 pieces
- 350 grams (1 ¾ cups) muscovado sugar
- 125 mls (½ cup) maple syrup
- 250 mls (1 cup) malt whisky
- 2 cinnamon quills
- 8 cardomom pods | bruised
- 50 grams ginger | peeled and chopped
Pineapple and Guinness
- 500 mls pineapple juice
- 500 mls Guinness
- 400 grams (2 cups firmly packed) brown sugar
- ¼ teaspoon ground cloves
Chipotle, Lime, and Pineapple
- ½ pineapple | skin removed and cut into chunks keeping any juice
- 2 limes | juice only
- 180 grams palm sugar | crushed
- 2 chipotle chillies | ones that come in adobo sauce
- 1 bunch coriander | washed and chopped
Pineapple, Palm Sugar, and Fish Sauce
- 2 garlic cloves | skin removed and chopped
- 3 birdseye chillies | seeds removed and chopped
- 150 grams palm sugar
- 250 mls (1 cup) pineapple juice
- 85 mls (one third cup) lime juice
- 85 mls (one third cup) soy sauce
- 40 mls (2½ tablespoons) fish sauce
Mango, Pineapple, and Chilli
- 250 grams (two thirds cup) mango chutney
- 55 grams (¼ cup) brown sugar
- 65 mls (¼ cup) pineapple juice
- ¼ teaspoon dried chilli flakes
Bourbon and Pineapple
- 165 grams (¾ cup) brown sugar
- 85 mls (one third cup) pineapple juice
- 65 mls (¼ cup) apple cider vinegar
- 65 mls (¼ cup) bourbon
- 1 tablespoon dijon mustard
- 2 tablespoons finely chopped rosemary
- ½ tablespoon ground allspice
- ½ tablespoon ground cinnamon
Pineapple and Brown Sugar
- 440 grams crushed pineapple
- 200 grams (1 cup firmly packed) brown sugar
- 1 tablespoon dijon mustard
- ¼ teaspoon ground cloves
Rum and Pineapple
- 85 mls (one third cup) pineapple juice
- 55 mls (¼ cup) spiced dark rum
- 165 grams (¾ cup) brown sugar
- 1 tablespoon grated ginger and juice

Instructions
Pineapple and Sake
- Combine all ingredients in a large saucepan over low/medium heat.Stir ingredients for around 3 minutes until the sugar dissolves.Simmer for 20 minutes or until the glaze has thickened slightly, stirring occasionally.Place glaze into a bowl, and set aside until needed.
Maple, Pineapple, and Whisky
- Barbeque pineapple pieces until golden. Cool, place in a blender, and blend until smooth. Pass the mixture through a fine sieve into a saucepan.Add all other ingredients to the saucepan and place the saucepan over low/medium heat.Stir ingredients for around 3 minutes until the sugar dissolves.Bring to a low simmer and cook for around 10-15 minutes (stirring occasionally) until reduced and syrupy. Strain glaze (removing herbs) into a bowl, and set aside until needed.
Pineapple and Guinness
- Place all ingredients into a medium saucepan. Stir ingredients for around 3 minutes until the sugar dissolves.Bring to a low simmer and cook for around 10-15 minutes (stirring occasionally) until reduced and syrupy. Pour glaze into a bowl, and set aside until needed.
Chipotle, Lime, and Pineapple
- Place all ingredients into a blender and blend until smooth. Ready to use immediately or place in an airtight container in the fridge until needed. Make this glaze on the day of baking your ham.
Pineapple, Palm Sugar, and Fish Sauce
- Place garlic, chillies, and palm sugar in a mortar and pestle and grind to a paste. Place in a bowl with pineapple juice, lime juice, soy sauce, and fish sauce.Mix ingredients well. The glaze is ready to use immediately or place in an airtight container in the fridge until needed. Make this glaze on the day of baking your ham.
Mango, Pineapple, and Chilli
- Place all ingredients in a small saucepan over medium/high heat.Cook stirring until chutney and sugar have dissolved (mango chunks won't dissolve, just the "jelly"), around 3-5 minutes. Simmer until slightly thickened.Pour glaze into a bowl, and set aside until needed.
Bourbon and Pineapple
- Place all ingredients into the saucepan and place the saucepan over medium heat.Stir ingredients for around 3 minutes until the sugar dissolves.Bring to a low simmer and cook for around 5-7 minutes (stirring occasionally) until the mixture has thickened. Pour glaze into a bowl, and set aside until needed.
Pineapple and Brown Sugar
- Place all ingredients into the saucepan and place the saucepan over low heat.Stir ingredients for around 3-5 minutes until the sugar dissolves.Pour glaze into a bowl, and set aside until needed.
Rum and Pineapple
- Place all ingredients in a medium size bowl.Mix well until the sugar dissolves. It is now ready to use, set aside until needed.

All measurements are Australian metric standard. All measures are level, and cups are lightly packed unless specified. 1 teaspoon = 5ml / 1 tablespoon = 20mls / 1 cup = 250ml /4 teaspoons = 1 tablespoon.
