    10 Awesome Pineapple Ham Glaze Recipes

    A rocking pineapple ham glaze is a staple to have in your recipe repertoire. Pineapple and ham is a flavour match made in heaven. The sweet taste of summery pineapple that has a bit of a zing matches well with the salty savoury flavour of ham.

    Below I share 10 of my favourite pineapple ham glaze recipes. There is sure to be at least one that will tickle your taste buds.

    Pineapple and Sake

    Nothing like giving you ham a Japanese twist with a slosh of sake. Don't use your good quality drinking sake, make sure you pick up some cooking sake from your local Asian grocer.

    Maple, Pineapple and Whisky

    A sticky, rich, and spicy pineapple ham glaze. By barbecuing your pineapple before blitzing it in the blender you add a richer more caramel note to the final result.

    Pineapple and Guinness

    This one takes the traditional baked ham flavours with a hit of Irish Guinness beer. The beer adds a savoury depth and roundness to the glaze.

    Chipotle, Lime and Pineapple

    The splendorous smoky chipotle chilli, coriander, and limes add a slight Tex-Mex vibe to this pineapple ham glaze. This ham would go beautifully with a side of slaw and barbecued cobs of corn.

    Pineapple, Palm Sugar, and Fish Sauce

    Do I have your attention with the fish sauce? Classic Vietnamese flavours are blended together to create a South East Asian style glaze. It is stickily delicious!

    Mango, Pineapple, and Chilli

    Two great Australian summer fruits are combined in this glaze to bring a summery feel to the table. The chilli adds an extra punch, but is optional.

    • Mango Chutney
    • Brown Sugar
    • Pineapple Juice
    • Dried Chilli Flakes

    Bourbon and Pineapple

    All the classic baked ham flavours with a bourbon kick. Herbs, spices, mustard add great flavours to this sticky pineapple bourbon glaze.

    Pineapple and Brown Sugar

    This is probably the classic pineapple ham glaze. Crushed pineapple mixed with brown sugar, mustard and ground cloves. Only four ingredients.

    Rum and Pineapple

    This ham glaze is a twist on my popular Dark and Stormy baked ham. Crushed pineapple has been added to make this a tropical ham glaze.

    • Pineapple
    • Spiced Rum
    • Dark Brown Sugar
    • Limes
    • Ginger

    Pineapple and Mustard

    Sweet, savoury, and tangy from the mustard. Both whole grain and dijon mustard are used in this recipe for that extra mustard kick to our final pineapple ham glaze in this collection..

    Ingredients

    Pineapple and Sake

    • 500 mls (2 cups) pineapple juice
    • 400 grams (2 cups firmly packed) brown sugar
    • 250 mls (1 cup) saké
    • 2 limes | zest and juice
    • 30 grams ginger | peeled and sliced
    • 5 kaffir lime leaves | bruised
    • 1 ½ tablespoons coriander seeds
    • 20 whole cloves

    Maple, Pineapple, and Whisky

    • 2 pineapples | remove skin and cut into each pineapple into 6 pieces
    • 350 grams (1 ¾ cups) muscovado sugar
    • 125 mls (½ cup) maple syrup
    • 250 mls (1 cup) malt whisky
    • 2 cinnamon quills
    • 8 cardomom pods | bruised
    • 50 grams ginger | peeled and chopped

    Pineapple and Guinness

    • 500 mls pineapple juice
    • 500 mls Guinness
    • 400 grams (2 cups firmly packed) brown sugar
    • ¼ teaspoon ground cloves

    Chipotle, Lime, and Pineapple

    • ½ pineapple | skin removed and cut into chunks keeping any juice
    • 2 limes | juice only
    • 180 grams palm sugar | crushed
    • 2 chipotle chillies | ones that come in adobo sauce
    • 1 bunch coriander | washed and chopped

    Pineapple, Palm Sugar, and Fish Sauce

    • 2 garlic cloves | skin removed and chopped
    • 3 birdseye chillies | seeds removed and chopped
    • 150 grams palm sugar
    • 250 mls (1 cup) pineapple juice
    • 85 mls (one third cup) lime juice
    • 85 mls (one third cup) soy sauce
    • 40 mls (2½ tablespoons) fish sauce

    Mango, Pineapple, and Chilli

    • 250 grams (two thirds cup) mango chutney
    • 55 grams (¼ cup) brown sugar
    • 65 mls (¼ cup) pineapple juice
    • ¼ teaspoon dried chilli flakes

    Bourbon and Pineapple

    • 165 grams (¾ cup) brown sugar
    • 85 mls (one third cup) pineapple juice
    • 65 mls (¼ cup) apple cider vinegar
    • 65 mls (¼ cup) bourbon
    • 1 tablespoon dijon mustard
    • 2 tablespoons finely chopped rosemary
    • ½ tablespoon ground allspice
    • ½ tablespoon ground cinnamon

    Pineapple and Brown Sugar

    • 440 grams crushed pineapple
    • 200 grams (1 cup firmly packed) brown sugar
    • 1 tablespoon dijon mustard
    • ¼ teaspoon ground cloves

    Rum and Pineapple

    • 85 mls (one third cup) pineapple juice
    • 55 mls (¼ cup) spiced dark rum
    • 165 grams (¾ cup) brown sugar
    • 1 tablespoon grated ginger and juice

    Pineapple and Mustard

    • 250 mls (1 cup) pineapple juice
    • 200 grams (1 cup firmly packed) brown sugar
    • 2 tablespoons dijon mustard
    • 3 tablespoons whole grain mustard

    Instructions
     

    Pineapple and Sake

    • Combine all ingredients in a large saucepan over low/medium heat.
      Stir ingredients for around 3 minutes until the sugar dissolves.
      Simmer for 20 minutes or until the glaze has thickened slightly, stirring occasionally.
      Place glaze into a bowl, and set aside until needed.

    Maple, Pineapple, and Whisky

    • Barbeque pineapple pieces until golden. Cool, place in a blender, and blend until smooth. Pass the mixture through a fine sieve into a saucepan.
      Add all other ingredients to the saucepan and place the saucepan over low/medium heat.
      Stir ingredients for around 3 minutes until the sugar dissolves.
      Bring to a low simmer and cook for around 10-15 minutes (stirring occasionally) until reduced and syrupy.
      Strain glaze (removing herbs) into a bowl, and set aside until needed.

    Pineapple and Guinness

    • Place all ingredients into a medium saucepan.
      Stir ingredients for around 3 minutes until the sugar dissolves.
      Bring to a low simmer and cook for around 10-15 minutes (stirring occasionally) until reduced and syrupy.
      Pour glaze into a bowl, and set aside until needed.

    Chipotle, Lime, and Pineapple

    • Place all ingredients into a blender and blend until smooth.
      Ready to use immediately or place in an airtight container in the fridge until needed. Make this glaze on the day of baking your ham.

    Pineapple, Palm Sugar, and Fish Sauce

    • Place garlic, chillies, and palm sugar in a mortar and pestle and grind to a paste. Place in a bowl with pineapple juice, lime juice, soy sauce, and fish sauce.
      Mix ingredients well. The glaze is ready to use immediately or place in an airtight container in the fridge until needed. Make this glaze on the day of baking your ham.

    Mango, Pineapple, and Chilli

    • Place all ingredients in a small saucepan over medium/high heat.
      Cook stirring until chutney and sugar have dissolved (mango chunks won't dissolve, just the "jelly"), around 3-5 minutes. Simmer until slightly thickened.
      Pour glaze into a bowl, and set aside until needed.

    Bourbon and Pineapple

    • Place all ingredients into the saucepan and place the saucepan over medium heat.
      Stir ingredients for around 3 minutes until the sugar dissolves.
      Bring to a low simmer and cook for around 5-7 minutes (stirring occasionally) until the mixture has thickened.
      Pour glaze into a bowl, and set aside until needed.

    Pineapple and Brown Sugar

    • Place all ingredients into the saucepan and place the saucepan over low heat.
      Stir ingredients for around 3-5 minutes until the sugar dissolves.
      Pour glaze into a bowl, and set aside until needed.

    Rum and Pineapple

    • Place all ingredients in a medium size bowl.
      Mix well until the sugar dissolves. It is now ready to use, set aside until needed.

    Pineapple and Mustard

    • Place all ingredients in a medium size bowl.
      Mix well until the sugar dissolves. It is now ready to use, set aside until needed.

    Oven Temperatures

    All oven temperatures are fan forced.

    Measurement Notes

    All measurements are Australian metric standard. All measures are level, and cups are lightly packed unless specified. 1 teaspoon = 5ml / 1 tablespoon = 20mls / 1 cup = 250ml /4 teaspoons = 1 tablespoon.

    GENERAL COOK’S NOTES
    All oven temperatures are for a conventional oven, if using fan forced lower the temperature by 20 Deg C (70 Deg F).
    All measurements are Australian tablespoons and cups. All measures are level, and cups are lightly packed unless specified;
    • 1 teaspoon equals 5ml
    • 1 tablespoon equals 20 ml (Nth America, NZ & UK use 15ml tablespoons)
    • 1 cup equals 250ml (Nth America use 237ml)
    • 4 teaspoons equals 1 tablespoon
    • I use the below unless specified in my recipes;
    Herbs are fresh | Vegetables are of a medium size | Eggs are roughly 60 grams in weight (large)
