    Scrumptious Tim Tam Rocky Road

    Yes, Tim Tam rocky road! I have taken Australia's favourite biscuit and turned it into the much loved rocky road chocolate. Yes, it is as scrumptious as it sounds!

    This rocky road is also packed with marshmallows and red raspberry lollies. Only four ingredients (6 if you decorate it) for a super indulgent treat, or gift for those you love.

    We Aussies love our Tim Tams, but don't despair if you don't have them in your neck of the woods. You can easily swap out the Tim Tam biscuits for your local favourite cookie of choice.

    Ingredients

    1. Marshmallows: You can use mini marshmallows or cut up larger ones. My preference is for plain or vanilla marshmallows.
    2. Tim Tams: The Tim Tam is an Australian icon, two chocolate cookies with a cream filling dipped in chocolate. You can substitute them for your favourite cookie if you would like. I used original flavour, but choose the flavour that you love.
    3. Red Raspberry Lollies: Any soft raspberry lolly will do.
    4. Milk Chocolate: Use your favourite eating milk chocolate, not cooking chocolate.
    5. White Chocolate: This is optional for decoration.
    6. Mini Tim Tams: This is optional for decoration.

    Tim Tam Flavours

    There are many flavours available.  In this recipe I use original flavour, but use whatever flavour you would like to experiment with.

    If using ones with dark chocolate coating, I suggest using dark chocolate instead of milk chocolate.  The same goes if using white chocolate Tim Tam biscuits, use white chocolate instead of milk chocolate.

    Also, swap out the red raspberries with a suitable alternative if using flavoured Tim Tams, eg;

    Mint Tim Tams:  You could use Peppermint Crips or other mint lollies
    Caramel Tim Tams:  Use Jersey Caramels, toffee, or fudge

    Recipe Walk Through

    Place milk chocolate in a large bowl. Using the microwave melt the chocolate.

    I blast it for 1 minute, then give it a stir. It usually has only started to melt at this stage.

    Then keep melting the chocolate in 30 second intervals, stirring between each one until the chocolate has melted.

    Add chopped Tim Tams, chopped marshmallows (whole if using mini ones), and whole red raspberries to the bowl with the melted chocolate.

    Mix all the ingredients thoroughly to make sure everything is coated well with the melted chocolate.

    Line a 20 x 25cm (8 x 10 inch) lamington/slice tin with baking paper.

    Spoon Tim Tam rocky road mixture into the prepared tin and spread it out evenly.

    It is ready to go into the fridge to set at this stage. Decorating as below is totally optional, but looks great.

    If decorating your Tim Tam rocky road melt white chocolate in the microwave the same way you did the milk chocolate.

    Using a spoon drizzle the melted white chocolate over the top of the rocky road.

    You can use dark chocolate or ruby chocolate as an alternative.

    Then gently press mini Tim Tams randomly over the top of the white chocolate.

    Place in the fridge for a couple of hours to set. Then remove from the tin and baking paper. Cut into desired sized pieces and store in an air tight container.

    Special Equipment

    Ingredients

    • 300 grams Tim Tams | this is 15 Tim Tam biscuits
    • 360 grams (0.79 lbs) milk chocolate | use your favourite eating chocolate
    • 190 grams (0.42 lbs) red raspberry lollies | use any soft raspberry lolly you like
    • 90 grams (0.2 lbs) marshmallows | use vanilla or plain

    Decoration

    • 140 grams (0.31 lbs) white chocolate | use your favourite eating chocolate
    • 1 packet mini Tim Tams

    Instructions
     

    • Line a 20 x 25cm (8 x 10 inch) lamington/slice tin with baking paper.
    • Place milk chocolate in a large bowl. Using the microwave melt the chocolate.

    All oven temperatures are fan forced.

    Measurement Notes

    All measurements are Australian metric standard. All measures are level, and cups are lightly packed unless specified. 1 teaspoon = 5ml / 1 tablespoon = 20mls / 1 cup = 250ml /4 teaspoons = 1 tablespoon.

    Recipe Notes

    TIM TAM BISCUITS
    Tim Tam biscuits are an Australian cookie made by Arnott's.  They are now exported to a lot of countries and can even be found now in the USA.  If you can't find Tim Tams you can substitute with your favourite cookie.

    GENERAL COOK’S NOTES
    All oven temperatures are for a conventional oven, if using fan forced lower the temperature by 20 Deg C (70 Deg F).
    All measurements are Australian tablespoons and cups. All measures are level, and cups are lightly packed unless specified;
    • 1 teaspoon equals 5ml
    • 1 tablespoon equals 20 ml (Nth America, NZ & UK use 15ml tablespoons)
    • 1 cup equals 250ml (Nth America use 237ml)
    • 4 teaspoons equals 1 tablespoon
    • I use the below unless specified in my recipes;
    Herbs are fresh | Vegetables are of a medium size | Eggs are roughly 60 grams in weight (large)
